Souffle Café
It’s so fluffy you might actually cry. Soufflé pancakes, the famously jiggly, cloud-like treats from Japan, have made themselves right at home in Rotterdam, and Souffle Café Rotterdam on the Mariniersweg is fully dedicated to them.
These sky-high pancakes (we’re talking 4–5 cm thick!) are the sweet lovechild of a soufflé and a pancake, and they’re just as dreamy as they sound.
The menu offers a rotating selection of flavours, from butter & syrup to mango, matcha berry or full-on Nutella. Fancy something else? Go for their egg toasts, a tower of macarons, a soft cake roll (hello, tiramisu and red velvet) or a bowl of Bingsu — that irresistibly fluffy Korean shaved ice dessert topped with taro, mango or matcha.
Drinks-wise, you’re in for a treat too. Think colourful bubble teas, creamy matcha lattes and other sweet pairings that make this café a dessert-lover’s daydream. Add in a swoon-worthy pastel pink interior, cherry blossoms in bloom and some of the cutest plating in town, and you’ve got yourself a one-way ticket to Tokyo café vibes!
